Beets

Roasted Beets:

Wash, trim and wrap beets individually in foil and place in a shallow pan. (If you do not wrap them they will ooze all over your pan)

Roast beets in preheated oven at 375 F until tender; test them with a sharp paring knife, piercing easily.
When cooled, unwrap the beets and rub away skin.

Uses: Slice into wedges and dress with sauce or vinaigrette of choice.

Puree roasted beets in blender or food processor and freeze in ice-cube trays; use in chocolate baked goods to enhance cocoa flavor and add increase nutritional value!
