Broccoli

****Roasted Broccoli****(delicious!):

Heat oven to 450-500 degrees.
Trim bottom of broccoli stalk and then slice lengthwise through the head and stalk into sections that are 1/3 inch thin. Be brutal. Cut off the stalk as needed (still use it) to ensure pieces are of uniform length.

Toss in bowl with olive oil (about 1 Tbl per head) and equal amounts of salt and sugar (1/4 tsp each per head).

Spread in one layer on cookie sheet and roast for 10 minutes.
Remove from oven, toss with tongs to re-arrange, and roast again for up to 10 minutes - to your liking!

Broccoli Soup:


Steam or boil broccoli florets until tender. Puree with stock and other roasted vegetables (onions, carrots, potatoes....). Season to taste.
